From the fire
Beef short rib£28
Slow over oak, smoked marrow, pickled shallot.
Fire lit Tue–Sun · London N22
Oak and beech embers, whatever the season brings, and a long table that never rushes you home. A neighbourhood grill with nothing between the ingredient and the flame.
The way we cook
One open hearth runs the length of the kitchen. Everything on the menu meets it, from whole fish to a wedge of cabbage.
We buy whole animals and day-boat fish, cook what the growers bring that week, and pour wine from small producers. Order a few plates and pass them round.
Oak for heat, beech for sweetness. The fire is lit at two and fed until the last plate.
Vegetables get the best seat on the grill. The menu changes when the market garden does.
A short list with a person behind every bottle. Most come by the glass.
